Great for a lazy Sunday lunch, this is a great recipe to use up your leftover vegetables you have from a roast.
Recently a group of my girlfriends were over for the weekend and we over catered the night before and so one of the girls prepared us this flavoursome lunch. Thank you Helen!
Slice up Baked, Potatoes, Sweet Potatoes and onions.
Add beans, peas, broccoli, cauliflower, and asparagus, corn or anything you have left over from your roast.
Place all into an oven proof dish.
In a large bowl lightly beat together,
6 Eggs
300ml Cream
2 Tbsp Aioli or Mayonnaise
Salt & Pepper
Pour over the vegetables, place sliced tomato & mushrooms over the top.
Sprinkle with chopped parsley and bake in your Wildcat Wood Fired Oven at 200oC for 1 hour.
